2 cans (15 oz each) white beans (cannellini or great northern), drained and rinsed

1 cup homemade or store-bought basil pesto

1 cup cherry tomatoes, halved

1 cup fresh spinach, roughly chopped

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1/2 teaspoon red pepper flakes (optional)

1 tablespoon olive oil

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Base: In a large mixing bowl, combine the drained white beans, basil pesto, halved cherry tomatoes, chopped spinach, garlic powder, red pepper flakes (if using), and olive oil. Season with salt and pepper to taste. Gently mix until all ingredients are well coated with pesto.

      Assemble the Bake: Transfer the bean mixture into a greased 9x13-inch baking dish. Spread it out evenly.

        Add Cheese: Sprinkle the shredded mozzarella cheese evenly over the top of the bean mixture. Then, add a layer of grated Parmesan cheese for extra flavor.

          Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the cheese is melted, bubbly, and slightly golden.

            Let it Cool: Once baked, remove from the oven and allow it to cool for about 5 minutes.
