Whipped Feta Bruschetta

8 oz (225g) feta cheese, crumbled

1/2 cup (120ml) Greek yogurt

2 tablespoons olive oil, plus more for drizzling

1 tablespoon lemon juice

1 teaspoon minced garlic

Salt and pepper, to taste

1 cup cherry tomatoes, halved

1/4 cup fresh basil leaves, chopped

1 tablespoon balsamic glaze

1 French baguette or ciabatta, sliced into 1/2-inch pieces

Instructions
 

Whip the Feta: In a medium bowl, combine the crumbled feta, Greek yogurt, olive oil, lemon juice, minced garlic, salt, and pepper. Use an electric mixer or a food processor to blend until smooth and creamy. Taste and adjust the seasoning if necessary.

    Prepare the Topping: In another bowl, mix together the halved cherry tomatoes, chopped basil, a pinch of salt, and a drizzle of olive oil. Toss gently to combine and let it sit for about 10 minutes to allow the flavors to meld.
