2 pounds ground beef

1 cup mashed potatoes (prepared and cooled)

1 cup shredded cheddar cheese

1/2 cup cooked and crumbled bacon

1/2 cup chopped green onions

1/2 cup milk

1/4 cup ketchup (plus more for topping)

1/4 cup barbecue sauce

1/4 cup breadcrumbs

2 large eggs

2 teaspoons garlic powder

1 teaspoon onion powder

Salt and pepper to taste

Preheat Oven: Preheat your oven to 350°F (175°C).

    Mix Meatloaf Ingredients: In a large mixing bowl, combine the ground beef, mashed potatoes, cheddar cheese, cooked bacon, green onions, milk, ketchup, barbecue sauce, breadcrumbs, eggs, garlic powder, onion powder, salt, and pepper. Mix until well combined but don't overwork the meat.

      Shape the Loaf: Transfer the mixture to a loaf pan and shape it into a loaf. Make a slight depression on top and spread extra ketchup over it for added flavor and moisture.

        Bake: Place the loaf pan in the preheated oven and bake for about 1 hour, or until the internal temperature reaches 160°F (70°C) and the meatloaf is cooked through.

          Rest and Serve: Let the meatloaf rest for about 10 minutes before slicing. This allows the juices to redistribute for a moist and flavorful bite. Serve warm alongside your favorite sides, like steamed vegetables or a crisp salad.
