1 lb ground turkey

1 tbsp olive oil

1 packet taco seasoning

1 cup water

4 cups mixed greens (romaine, spinach, arugula)

1 cup cherry tomatoes, halved

1 cup corn (fresh, frozen, or canned)

1 cup black beans, rinsed and drained

1 avocado, diced

1 cup shredded cheese (cheddar or Mexican blend)

1/4 cup chopped fresh cilantro

1/2 cup sour cream or Greek yogurt

Juice of 1 lime

Salt and pepper to taste

Tortilla chips or crispy taco shells for garnish

Instructions
 

Cook the Turkey: In a skillet, heat the olive oil over medium heat. Add the ground turkey and cook until browned, breaking it apart with a spatula, about 5-7 minutes.

    Season the Meat: Add the taco seasoning and water to the skillet. Stir to combine and let it simmer for 5-10 minutes until the mixture thickens. Season with salt and pepper to taste.

      Prepare the Salad Base: While the turkey is cooking, wash and chop the mixed greens and divide them among serving bowls.
