Tortellini Pasta Salad Recipe

Ingredients
  

12 oz cheese tortellini

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 cup black olives, sliced

1/2 cup bell pepper, diced (any color)

1/4 cup red onion, finely chopped

1/3 cup fresh basil, chopped

1/4 cup balsamic vinaigrette

1/4 cup olive oil

Salt and pepper to taste

Optional: Fresh mozzarella balls for garnish

Instructions
 

Cook the Pasta: In a large pot of boiling salted water, add the cheese tortellini and cook according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process.

    Prep the Vegetables: While the tortellini is cooking, chop the cherry tomatoes, cucumber, bell pepper, and red onion. Slice the black olives and chop the fresh basil.

      Mix the Salad: In a large mixing bowl, combine the cooked tortellini, cherry tomatoes, cucumber, black olives, bell pepper, red onion, and basil.

        Dress the Salad: In a separate small bowl, whisk together the balsamic vinaigrette, olive oil, salt, and pepper. Pour the dressing over the tortellini salad and toss gently to combine all ingredients well.

          Chill and Serve: Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to let the flavors meld. Serve chilled or at room temperature, garnished with fresh mozzarella balls if desired.
