Tomato Jam Bruschetta

4 ripe tomatoes, finely chopped

1 medium red onion, diced

2 cloves garlic, minced

2 tablespoons olive oil

1 tablespoon balsamic vinegar

1 tablespoon brown sugar

1 teaspoon fresh basil, chopped (plus extra for garnish)

Salt and pepper to taste

1 French baguette, sliced diagonally

1 cup ricotta cheese (optional)

Balsamic glaze (for drizzling)

Make the Tomato Jam: In a medium saucepan, combine the finely chopped tomatoes, red onion, minced garlic, olive oil, balsamic vinegar, brown sugar, basil, salt, and pepper. Stir well to combine.

    Cook the Mixture: Place the saucepan over medium heat and bring the mixture to a gentle simmer. Reduce the heat to low and let it cook uncovered for about 20-30 minutes, stirring occasionally, until the mixture thickens and reduces to a jam-like consistency.

      Prepare the Bread: While the tomato jam is simmering, preheat your oven to 400°F (200°C). Arrange the sliced baguette on a baking sheet and brush them lightly with olive oil.

        Toast the Baguette: Bake the baguette slices in the preheated oven for about 8-10 minutes or until they are golden brown and crispy.

          Assemble the Bruschetta: Once the bread is done toasting, take it out of the oven. If desired, spread a layer of ricotta cheese on each slice. Top with a generous spoonful of the warm tomato jam.

            Garnish and Serve: Drizzle with balsamic glaze and sprinkle with additional fresh basil leaves for garnish. Serve immediately while warm.
