1 cup all-purpose flour

1/4 cup unsweetened cocoa powder

1/4 cup granulated sugar

1 tablespoon baking powder

1/2 teaspoon salt

1 cup milk (dairy or non-dairy)

1 large egg

2 tablespoons melted butter (plus extra for cooking)

1 teaspoon vanilla extract

1/2 cup chocolate chips (semi-sweet or milk chocolate)

Optional toppings: whipped cream, fresh berries, sliced bananas, maple syrup, additional chocolate chips

Instructions
 

In a large mixing bowl, sift together the flour, cocoa powder, sugar, baking powder, and salt until well combined.

    In a separate bowl, whisk together the milk, egg, melted butter, and vanilla extract until smooth.

      Pour the wet ingredients into the dry ingredients and stir gently until just combined. Be careful not to over-mix; a few lumps are okay!

        Fold in the chocolate chips to the batter.

          Preheat a non-stick skillet or griddle over medium heat and brush lightly with melted butter.

            Once hot, pour 1/4 cup of batter for each pancake onto the skillet. Cook until small bubbles form on the surface (about 2-3 minutes), then flip and cook for an additional 1-2 minutes until the pancakes are cooked through and fluffy.

              Transfer the pancakes to a plate and keep warm while you repeat with the remaining batter.
