1.5 lbs boneless, skinless chicken thighs

1 tablespoon olive oil

1 large onion, thinly sliced

3 cloves garlic, minced

1 jalapeño, seeded and finely chopped (adjust for heat preference)

1 cup chicken broth

1 (14 oz) can fire-roasted diced tomatoes

2 tablespoons chipotle pepper in adobo sauce (more or less to taste)

1 teaspoon ground cumin

1 teaspoon dried oregano

Salt and pepper to taste

Corn or flour tortillas, for serving

Fresh cilantro, chopped (for garnish)

Avocado slices (for garnish)

Crumbled queso fresco or cheese of choice (optional)

Instructions
 

Cook the Chicken: In a large skillet, heat the olive oil over medium heat. Add the chicken thighs and brown them for about 5-6 minutes on each side. Once browned, remove the chicken and set it aside.

    Sauté Aromatics: In the same skillet, add the sliced onion and jalapeño. Sauté for about 4-5 minutes until the onion is translucent. Add the minced garlic and cook for an additional minute until fragrant.

      Prepare the Sauce: Pour in the chicken broth, fire-roasted tomatoes, chipotle peppers, cumin, and oregano. Stir well to combine and season with salt and pepper to taste.

        Simmer: Add the browned chicken back into the skillet, ensuring it's submerged in the sauce. Cover and let it simmer on low heat for 20-25 minutes, until the chicken is cooked through and tender.

          Shred the Chicken: Remove the chicken from the skillet and shred it using two forks. Return the shredded chicken to the skillet and stir it into the sauce, allowing it to soak in for an additional 5-10 minutes.

            Prepare Tortillas: While the chicken is soaking up the flavors, warm your tortillas in a separate dry skillet or wrap them in foil and heat in the oven at 350°F (175°C) for about 10 minutes.

              Assemble Tacos: To serve, fill each tortilla with the chicken tinga mixture. Top with fresh cilantro, avocado slices, and crumbled queso fresco if desired.
