1 lb ground chicken

2 tablespoons vegetable oil

3 cloves garlic, minced

1 tablespoon ginger, finely grated

1 red bell pepper, diced

1 cup carrots, grated

1 cup water chestnuts, diced

3 tablespoons soy sauce

2 tablespoons fish sauce

1 tablespoon rice vinegar

1 tablespoon brown sugar

1 tablespoon sriracha (adjust to taste)

1/4 cup green onions, chopped

1 head of butter or iceberg lettuce, leaves separated

Fresh cilantro, for garnish

Lime wedges, for serving

Instructions
 

Prepare the Lettuce: Carefully separate the leaves from the lettuce head and wash gently. Pat dry and set aside.

    Cook the Chicken: In a large skillet over medium heat, add the vegetable oil. Once hot, add the ground chicken. Cook for about 5-7 minutes, breaking it apart with a wooden spoon, until browned and cooked through.

      Add Aromatics: Add the minced garlic and grated ginger to the skillet. Sauté for 1-2 minutes until fragrant.

        Mix in Veggies: Stir in the diced red bell pepper, grated carrots, and diced water chestnuts. Cook for an additional 3-4 minutes until the vegetables are tender-crisp.

          Flavor the Filling: In a small bowl, whisk together the soy sauce, fish sauce, rice vinegar, brown sugar, and sriracha. Pour this mixture over the chicken and veggies in the skillet. Stir well to combine and cook for another 2 minutes to let the flavors meld.
