Summer Corn Salad

Ingredients
  

4 ears of fresh corn, husked

1 cup cherry tomatoes, halved

1 medium red bell pepper, diced

1/2 cup red onion, finely chopped

1 avocado, diced

1/4 cup fresh cilantro, chopped

1/4 cup feta cheese, crumbled

Juice of 2 limes

2 tablespoons olive oil

Salt and pepper to taste

Instructions
 

Bring a large pot of salted water to a boil. Add the corn and cook for about 4-5 minutes until tender but still crisp.

    Remove the corn from the pot and let it cool slightly. Once cool, carefully cut the kernels off the cob and transfer to a large mixing bowl.

      Add the cherry tomatoes, diced red bell pepper, chopped red onion, diced avocado, fresh cilantro, and crumbled feta cheese to the bowl with the corn.

        In a small bowl, whisk together the lime juice, olive oil, salt, and pepper to create the dressing.

          Pour the dressing over the salad and gently toss to combine all the ingredients.

            Taste and adjust seasoning if necessary. Serve immediately or chill in the refrigerator for 30 minutes to let the flavors meld.
