Ingredients

2 large red onions, thinly sliced

2 tablespoons olive oil

2 tablespoons sumac

1 teaspoon sea salt

1 teaspoon black pepper

1 tablespoon lemon juice

Fresh parsley, chopped (for garnish)

Optional: 1 teaspoon honey (for a touch of sweetness)

Instructions

Begin by peeling the red onions and slicing them thinly. The thinner the slices, the more tender they will become during the cooking process.

In a large skillet, heat the olive oil over medium heat. Once hot, add the sliced onions and sauté for about 10-12 minutes until they soften and begin to caramelize, stirring frequently.

Once onions are translucent and slightly golden, sprinkle in the sumac, sea salt, and black pepper. If you prefer a hint of sweetness, drizzle in the honey at this point. Stir well to combine and cook for an additional 3-4 minutes.

Remove the skillet from heat and drizzle lemon juice over the caramelized onions. Stir well to evenly distribute.

Let cool slightly, then transfer the sumac onions to a serving dish. Garnish with freshly chopped parsley for a burst of color and freshness.

Serve warm or at room temperature as a delicious side dish, topping for grilled meats, or a zesty addition to salads.
