Street Corn Chicken Rice Bowl

Ingredients
  

1 cup brown rice

2 cups chicken broth (or vegetable broth)

2 grilled chicken breasts, diced

1 cup corn kernels (fresh, frozen, or canned)

1/2 cup cherry tomatoes, halved

1 avocado, diced

1/4 cup red onion, finely chopped

1/4 cup fresh cilantro, chopped

1 lime, juiced

1 teaspoon chili powder

1/2 teaspoon smoked paprika

1/2 teaspoon garlic powder

Salt and pepper, to taste

1/2 cup crumbled feta cheese (optional)

1/4 cup mayonnaise

1 tablespoon lime juice (for sauce)

1 teaspoon chili powder (for sauce)

1 tablespoon olive oil

Instructions
 

Cook the Rice: In a medium saucepan, combine brown rice and chicken broth. Bring to a boil, then reduce heat to low, cover, and simmer for about 45 minutes or until rice is tender and broth is absorbed. Remove from heat and let it sit covered for 10 minutes.

    Prepare the Street Corn: Heat olive oil in a skillet over medium heat. Add corn and sauté for about 5 minutes until it’s slightly charred. Stir in chili powder, smoked paprika, and garlic powder. Season with salt and pepper. Remove from heat.

      Make the Sauce: In a small bowl, mix mayonnaise, lime juice, and chili powder until well combined. Adjust seasoning as needed.

        Assemble the Bowl: Fluff the cooked rice with a fork and divide it into serving bowls. Top with grilled chicken, sautéed corn, cherry tomatoes, avocado, red onion, and cilantro.

          Add Feta (Optional): If desired, sprinkle crumbled feta cheese on top for a creamy finish.

            Drizzle with Sauce: Finish by drizzling the lime-chili mayonnaise over each bowl. Serve with lime wedges on the side.
