Ingredients

For the fruit filling:

2 cups fresh strawberries, hulled and sliced

2 cups fresh peaches, peeled and sliced (or canned, drained)

1/4 cup granulated sugar

1 tablespoon lemon juice

1 tablespoon cornstarch

1 teaspoon vanilla extract

For the crisp topping:

1 cup old-fashioned rolled oats

1/2 cup all-purpose flour

1/2 cup packed brown sugar

1/2 teaspoon ground cinnamon

1/4 teaspoon salt

1/2 cup unsalted butter, melted

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Prepare the Fruit Filling:

      - In a large mixing bowl, combine the sliced strawberries and peaches.

        - Add sugar, lemon juice, cornstarch, and vanilla extract. Toss the fruit gently until it's evenly coated.

          - Transfer the fruit mixture into a greased 9-inch square baking dish or similar-sized casserole dish.

            Make the Crisp Topping:

              - In another bowl, mix together the rolled oats, flour, brown sugar, cinnamon, and salt.

                - Pour in the melted butter and stir until the mixture is crumbly and well combined.

                  Assemble the Dish:

                    - Evenly distribute the crisp topping over the fruit filling in your baking dish.

                      Bake:

                        - Place the baking dish in the preheated oven and bake for 35-40 minutes, or until the topping is golden brown and the fruit is bubbly.

                          Cool and Serve:

                            - Remove the crisp from the oven and let it cool slightly before serving. This will allow the juices to thicken a bit.

                              - Serve warm with a scoop of vanilla ice cream or whipped cream, if desired.
