1 lb chicken thighs, boneless and skinless

1 cup jasmine rice

1 ½ cups chicken broth

¼ cup soy sauce

2 tbsp honey

1 tbsp sesame oil

3 cloves garlic, minced

1 inch ginger, grated

1 tbsp rice vinegar

2 green onions, chopped (for garnish)

1 tbsp sesame seeds (for garnish)

Salt and pepper, to taste

Marinate the Chicken: In a bowl, mix soy sauce, honey, sesame oil, garlic, ginger, rice vinegar, salt, and pepper. Add the chicken thighs, ensuring they are well coated. Marinate for at least 30 minutes (or up to overnight for more flavor).

    Cook the Rice: Rinse the jasmine rice under cold water until the water runs clear. In a medium pot, combine the rinsed rice and chicken broth. Bring to a boil, then reduce the heat to low, cover, and simmer for about 15 minutes until the rice is cooked and liquid is absorbed. Fluff the rice with a fork after removing from heat.

      Cook the Chicken: Heat a skillet over medium-high heat. Remove the chicken from the marinade (reserve the marinade for later). Cook the chicken thighs in the skillet for about 6-7 minutes on each side until golden brown and cooked through.
