2 cups fresh spinach, chopped

1 cup feta cheese, crumbled

1 cup shredded mozzarella cheese

4 large flour tortillas

1 tablespoon olive oil

2 cloves garlic, minced

1/2 teaspoon red pepper flakes (optional)

Salt and pepper to taste

Sour cream or Greek yogurt, for serving (optional)

Fresh cilantro or parsley, for garnish (optional)

Instructions
 

Sauté Spinach: In a skillet over medium heat, add the olive oil. Once hot, add the minced garlic and red pepper flakes. Sauté for about 30 seconds until fragrant.

    Add Spinach: Add the chopped spinach to the skillet and cook until wilted, about 2-3 minutes. Season with salt and pepper to taste.

      Mix Cheeses: In a bowl, combine the sautéed spinach mixture with the crumbled feta and shredded mozzarella cheese. Mix well until everything is evenly incorporated.

        Prepare Quesadillas: Heat a clean skillet over medium heat. Place one tortilla in the skillet and add a generous portion of the spinach and cheese mixture on one half of the tortilla. Fold the tortilla over to create a half-moon shape.

          Cook Quesadilla: Cook for about 2-3 minutes or until the bottom is golden brown. Carefully flip and cook for another 2-3 minutes until the second side is golden and the cheese is melted.

            Repeat: Remove the quesadilla from the skillet and repeat the process with the remaining tortillas and filling.

              Serve: Cut the quesadillas into triangles and serve warm with sour cream or Greek yogurt, garnished with fresh cilantro or parsley if desired.
