Spicy Turkey Cauliflower Rice

1 lb ground turkey

1 medium head of cauliflower, riced (or 4 cups store-bought cauliflower rice)

1 small red onion, diced

2 cloves garlic, minced

1 bell pepper (any color), diced

2 tablespoons soy sauce or tamari

1 tablespoon sriracha (adjust based on spice preference)

1 tablespoon olive oil

1 teaspoon ground cumin

1 teaspoon smoked paprika

½ teaspoon black pepper

½ teaspoon salt (to taste)

¼ cup fresh cilantro, chopped (for garnish)

1 lime, cut into wedges (for serving)

Instructions
 

Prep the Cauliflower: If using a whole head of cauliflower, remove the leaves and stem. Cut it into florets and pulse in a food processor until it resembles rice. Set aside.

    Cook the Turkey: In a large skillet, heat the olive oil over medium heat. Add the ground turkey and cook until browned, breaking it apart with a spoon (about 5-7 minutes). Drain excess fat if necessary.

      Sauté Vegetables: Add the diced onion and bell pepper to the skillet. Sauté for about 3-4 minutes until they start to soften. Stir in the minced garlic and cook for an additional minute until fragrant.

        Season the Mixture: Stir in the soy sauce, sriracha, ground cumin, smoked paprika, salt, and black pepper. Let it simmer for 2-3 more minutes until everything is well combined.
