Ingredients

4 boneless, skinless chicken breasts

1 cup buttermilk

2 jalapeños, finely chopped (seeds removed for less heat)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1 teaspoon salt

½ teaspoon black pepper

1 cup all-purpose flour

½ cup cornmeal

Oil for frying

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions

Marinate the Chicken: In a large bowl, combine the buttermilk, chopped jalapeños, garlic powder, onion powder, smoked paprika, salt, and black pepper. Add the chicken breasts, ensuring they are fully submerged. Cover and marinate in the refrigerator for at least 1 hour (or overnight for more flavor).

Prepare for Frying: In a shallow dish, mix together the all-purpose flour and cornmeal. Remove the marinated chicken from the refrigerator and let excess marinade drip off. Dredge each piece of chicken in the flour-cornmeal mixture until well coated, shaking off excess.

Heat the Oil: In a large, deep skillet or frying pan, heat oil over medium-high heat to 350°F (175°C). You want enough oil to submerge the chicken breasts about halfway.

Fry the Chicken: Working in batches, carefully place chicken breasts in the hot oil. Fry for about 6-8 minutes on each side until golden brown and cooked through (internal temperature should reach 165°F or 75°C). Adjust the heat as necessary to maintain oil temperature.

Drain and Serve: Once cooked, remove chicken from the skillet and place on a plate lined with paper towels to drain excess oil.

Garnish: Serve the Spicy Jalapeno Chicken garnished with fresh cilantro and lime wedges on the side for squeezing over.
