1 lb boneless, skinless chicken thighs, diced

2 tablespoons honey

2 tablespoons soy sauce

1 tablespoon fresh ginger, grated

2 cloves garlic, minced

1 tablespoon sesame oil

Salt and pepper to taste

For the Rice:

1 cup jasmine or basmati rice

2 cups water

Pinch of salt

For the Vegetables:

1 cup broccoli florets

1 bell pepper, sliced

1 carrot, julienned

2 tablespoons olive oil

Salt and pepper to taste

For the Yum Yum Sauce:

1/2 cup mayonnaise

2 tablespoons ketchup

1 tablespoon rice vinegar

1 teaspoon garlic powder

1 teaspoon sugar

1 tablespoon water (adjust for desired consistency)

Prepare the Rice: In a medium saucepan, combine jasmine rice, water, and a pinch of salt. Bring to a boil over high heat. Once boiling, reduce heat to low, cover, and simmer for 15 minutes or until all water is absorbed. Remove from heat and let it sit covered for 5 minutes before fluffing with a fork.

    Marinate the Chicken: In a large bowl, combine honey, soy sauce, grated ginger, minced garlic, red pepper flakes, sesame oil, salt, and pepper. Add the diced chicken and marinate for at least 30 minutes (or up to overnight for deeper flavor).

      Cook the Chicken: In a large skillet over medium-high heat, add the marinated chicken along with the marinade. Cook for 6-8 minutes or until the chicken is fully cooked and caramelized, stirring occasionally to prevent sticking.
