Ingredients
  

1 cup cottage cheese

1/2 cup black beans, drained and rinsed

1/2 cup corn (fresh or canned)

1/2 red bell pepper, diced

1 avocado, diced

1/4 cup cherry tomatoes, halved

1/4 cup red onion, finely chopped

1 jalapeño, sliced (optional, for heat)

1/4 cup cilantro, chopped

Juice of 1 lime

1 tsp cumin

1 tsp smoked paprika

Salt and pepper to taste

Tortilla chips for garnish (optional)

Instructions
 

In a mixing bowl, combine the cottage cheese, black beans, corn, red bell pepper, avocado, cherry tomatoes, red onion, and jalapeño (if using).

    Sprinkle in the cumin, smoked paprika, and season with salt and pepper to taste.

      Squeeze the lime juice over the mixture and gently stir until everything is well combined.
