Southern Fried Salmon Patties

1 can (15 oz) wild-caught salmon, drained and flaked

1/2 cup breadcrumbs (preferably Italian seasoned)

1/4 cup cornmeal

1/4 cup onion, finely chopped

1/4 cup bell pepper, finely chopped (any color)

2 cloves garlic, minced

1 large egg, beaten

1 tablespoon Dijon mustard

1 tablespoon hot sauce (optional)

1/2 teaspoon paprika

Salt and pepper to taste

Vegetable oil for frying

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions
 

In a large mixing bowl, combine the flaked salmon, breadcrumbs, cornmeal, chopped onion, bell pepper, and minced garlic. Mix well until combined.

    In a separate bowl, whisk together the beaten egg, Dijon mustard, hot sauce (if using), paprika, salt, and pepper. Pour this mixture over the salmon mixture and stir until everything is well incorporated.

      Form the mixture into patties, about 2-3 inches in diameter and 1/2 inch thick. You should get around 8-10 patties, depending on the size.

        Heat about 1/4 inch of vegetable oil in a large skillet over medium heat until hot but not smoking. Carefully place the patties into the skillet without overcrowding. Fry in batches if necessary.

          Cook the patties for about 4-5 minutes on each side, or until they are golden brown and crispy. Adjust the heat as needed to prevent burning.

            Once cooked, transfer the patties to a plate lined with paper towels to absorb any excess oil.

              Serve the southern fried salmon patties warm, garnished with fresh parsley and lemon wedges on the side.
