Ingredients

For the Soft Pretzels:

4 cups all-purpose flour

1 packet (2 1/4 teaspoons) active dry yeast

1 ½ cups warm water (about 110°F)

1 tablespoon sugar

1 teaspoon salt

½ cup baking soda (for the water bath)

Coarse sea salt (for topping)

For the Cheese Dip:

2 tablespoons butter

2 tablespoons all-purpose flour

1 cup milk (whole or 2%)

2 cups shredded sharp cheddar cheese

½ teaspoon garlic powder

½ teaspoon onion powder

Salt and pepper to taste

Optional: jalapeños, diced (for a spicy kick)

Instructions

Activate the Yeast: In a large bowl, combine warm water, sugar, and yeast. Allow it to sit for about 5-7 minutes until foamy.

Make the Dough: Slowly add the flour and salt to the yeast mixture, mixing until combined. Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic.

First Rise: Place the dough in a greased bowl, cover with a damp cloth or plastic wrap, and let it rise in a warm area for about 1 hour, or until doubled in size.

Preheat Oven: Preheat your oven to 450°F (230°C). Line two baking sheets with parchment paper.

Shape the Pretzels: Once risen, divide the dough into 8 equal pieces. Roll each piece into a long rope (about 24 inches), then twist it into a pretzel shape.

Baking Soda Bath: Bring a large pot of water to a boil and add the baking soda. Boil each pretzel for about 30 seconds, then transfer them to the baking sheets. Sprinkle with coarse sea salt.

Bake the Pretzels: Bake in the preheated oven for 12-14 minutes, or until golden brown. Remove and let cool slightly.

Prepare the Cheese Dip: In a saucepan, melt the butter over medium heat. Stir in the flour, cooking for about 1 minute until bubbly. Gradually whisk in the milk and continue stirring until thickened (about 3-5 minutes).

Add Cheese: Reduce heat and stir in the shredded cheddar, garlic powder, onion powder, and season with salt and pepper. Continue stirring until the cheese melts and the mixture is smooth.

Serve: Serve the warm pretzels with the creamy cheese dip. Enjoy the delightful combination of soft, salty pretzels with rich, cheesy goodness!
