Smoked Salmon Roll-Ups with Cucumber and Hummus

Simply spread hummus on whole wheat tortillas, layer with smoked salmon and cucumber, roll them up, and slice into bite-sized pieces. 8 ounces smoked salmon

1 large cucumber

1 cup hummus (store-bought or homemade)

2 tablespoons fresh dill, finely chopped

1 tablespoon lemon juice

Salt and pepper to taste

A drizzle of olive oil (optional)

6 whole wheat tortillas or thin wraps (for additional flavor, you could use herb-infused wraps)

Instructions
 

Prepare the Cucumber:

    Wash the cucumber thoroughly. Using a vegetable peeler or mandoline, slice the cucumber lengthwise into thin strips. Aim for about 1/8 inch thick. If the strips are too long, feel free to cut them in half.

      Mix the Hummus:

        In a bowl, combine the hummus with lemon juice, chopped dill, salt, and pepper. This adds a fresh flavor to your roll-ups.

          Spread Hummus on Tortillas:

            Take a tortilla or wrap and spread about 2-3 tablespoons of the hummus mixture evenly over the surface, leaving about an inch border around the edges.

              Layer the Ingredients:

                Lay 2-3 slices of smoked salmon horizontally across the middle of the hummus-covered tortilla. Place a few slices of cucumber on top of the salmon.

                  Roll-Up:

                    Starting from one edge, carefully roll the tortilla tightly, tucking in the fillings as you go. Make sure to roll it snugly to prevent the filling from spilling out. Repeat this process with the remaining tortillas and ingredients.

                      Slice and Serve:

                        Once all roll-ups are made, use a sharp knife to slice each roll into bite-sized pieces, about 1-2 inches thick. Arrange on a platter and drizzle with olive oil if desired.
