Skillet Banana Fritters

Ingredients
  

2 ripe bananas, mashed

1 cup all-purpose flour

1/4 cup sugar

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 teaspoon ground cinnamon

1 large egg

1/2 cup milk

1 teaspoon vanilla extract

1/4 cup walnuts or pecans, chopped (optional)

Vegetable oil for frying

Powdered sugar for dusting (optional)

Instructions
 

In a large mixing bowl, combine the mashed bananas, flour, sugar, baking powder, baking soda, salt, and ground cinnamon. Mix until well combined.

    In a separate bowl, whisk together the egg, milk, and vanilla extract until smooth.

      Pour the wet ingredients into the dry ingredient mixture and stir until just combined. If desired, fold in the chopped walnuts or pecans.

        Heat a skillet over medium heat and add enough vegetable oil to cover the bottom in a thin layer.

          Once the oil is hot, ladle about 1/4 cup of the batter into the skillet for each fritter. Flatten them slightly with the back of the ladle.

            Cook for about 2-3 minutes on each side until golden brown. Remove and place on a paper towel-lined plate to drain excess oil.

              Dust with powdered sugar (if using) before serving. Enjoy warm!
