1 cup cottage cheese (preferably low-fat)

4 large eggs, hard-boiled and chopped

¼ cup finely diced celery

¼ cup finely diced red onion

2 tablespoons mayonnaise (optional for creaminess)

1 teaspoon Dijon mustard

Begin by hard-boiling the eggs. Place the eggs in a saucepan covered with cold water, bring to a boil, and let boil for about 9-12 minutes. Once done, transfer the eggs to an ice bath to cool, then peel and chop them.
