Sheet Pan Sausage and Veggies

Ingredients
  

1 pound of Italian sausage (mild or spicy based on preference)

2 cups of bell peppers (mixed colors, sliced)

1 medium red onion (sliced)

2 cups of zucchini (sliced into half-moons)

1 cup of cherry tomatoes (halved)

4 cloves of garlic (minced)

3 tablespoons of olive oil

1 teaspoon of smoked paprika

1 teaspoon of Italian seasoning

Salt and pepper to taste

Fresh parsley (chopped for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Sheet Pan: Line a large sheet pan with parchment paper or lightly grease it with cooking spray for easier cleanup.

      Slice the Sausage: In a large bowl, slice the Italian sausage into bite-sized pieces.

        Mix the Veggies: Add the bell peppers, red onion, zucchini, cherry tomatoes, and minced garlic to the bowl with the sausage.

          Season: Drizzle the olive oil over the sausage and veggies. Sprinkle the smoked paprika, Italian seasoning, salt, and pepper. Toss everything together until well coated.

            Spread on the Pan: Pour the mixture onto the prepared sheet pan, spreading it out into an even layer for even cooking.

              Roast in the Oven: Place the sheet pan in the preheated oven and roast for 25-30 minutes, or until the sausage is cooked through and the veggies are tender and slightly caramelized. Stir halfway through for even cooking.

                Garnish and Serve: Once done, remove from the oven. Garnish with freshly chopped parsley before serving.
