Savory Japanese BBQ Chicken Fried Rice Extravaganza

Ingredients
  

2 cups cooked jasmine or sushi rice (preferably day-old)

1 lb boneless, skinless chicken thighs, diced

2 tablespoons soy sauce

1 tablespoon mirin (Japanese sweet rice wine)

1 tablespoon sake (optional)

1 tablespoon sesame oil

1 teaspoon grated ginger

3 cloves garlic, minced

1 medium onion, diced

1 cup mixed vegetables (peas, carrots, corn)

3 green onions, chopped

2 large eggs, beaten

Salt and pepper to taste

Toasted sesame seeds for garnish

Nori strips for garnish (optional)

Instructions
 

Marinate the Chicken: In a bowl, mix the diced chicken with soy sauce, mirin, sake, and grated ginger. Allow it to marinate for at least 15 minutes.

    Prep the Rice: If using freshly cooked rice, spread it out on a baking sheet to cool and dry for about 15 minutes, which helps prevent clumping in the fried rice.

      Cook the Chicken: Heat 1 tablespoon of sesame oil in a large skillet or wok over medium-high heat. Add the marinated chicken and stir-fry until it is cooked through and slightly caramelized, about 6-8 minutes. Remove from the skillet and set aside.

        Sauté Vegetables: In the same skillet, add the remaining tablespoon of sesame oil. Toss in the diced onion, garlic, and mixed vegetables. Sauté until the onions are translucent and vegetables are tender, about 3–4 minutes.

          Combine Ingredients: Push the vegetables to one side of the skillet, and pour in the beaten eggs. Scramble them until just set, then mix with the vegetables. Add the cooked rice and stir well to combine.

            Add Chicken and Season: Return the cooked chicken to the skillet. Season with additional soy sauce, salt, and pepper to taste. Stir-fry everything together for an additional 3-4 minutes, ensuring all ingredients are well combined and heated through.

              Finish and Serve: Remove from heat and fold in the chopped green onions. Transfer the fried rice to a serving dish and garnish with toasted sesame seeds and nori strips if desired.
