Roasted Parmesan Potatoes & Broccoli

Ingredients
  

1 lb baby potatoes, halved

3 cups broccoli florets

1/4 cup grated Parmesan cheese

3 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon garlic powder

Salt and pepper to taste

Fresh parsley, chopped for garnish (optional)

Instructions
 

Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

    In a large bowl, combine the halved baby potatoes, broccoli florets, minced garlic, olive oil, dried oregano, garlic powder, salt, and pepper. Toss everything together until the vegetables are evenly coated.

      Spread the potato and broccoli mixture in a single layer on the prepared baking sheet.

        Roast in the preheated oven for about 20 minutes.

          Remove from oven and sprinkle grated Parmesan cheese evenly over the top. Return to the oven and roast for an additional 10-15 minutes, or until the potatoes are tender and golden brown, and the broccoli is slightly crispy.

            Once done, take it out of the oven and let it cool for a couple of minutes. Garnish with freshly chopped parsley if desired.

              Serve warm as a side dish alongside your favorite protein!
