Ingredients

4 slices of sourdough bread

4 ounces cream cheese, softened

1 cup shredded sharp cheddar cheese

1 cup shredded pepper jack cheese

2 fresh jalapenos, roasted and chopped

2 tablespoons fresh cilantro, chopped

2 tablespoons butter, softened

½ teaspoon garlic powder

½ teaspoon onion powder

Salt and pepper to taste

Instructions

Roast the Jalapenos: Preheat your oven to 425°F (220°C). Place the halved jalapenos on a baking sheet, skin side up. Roast for about 15-20 minutes until the skins are blistered and charred. Once done, remove them from the oven, let them cool, then peel off the skins. Chop the jalapenos finely.

Prepare the Cheese Mixture: In a mixing bowl, combine the softened cream cheese, shredded cheddar, shredded pepper jack, chopped roasted jalapenos, cilantro, garlic powder, onion powder, salt, and pepper. Mix until well combined and creamy.

Assemble the Sandwiches: Spread a thin layer of the butter on one side of each slice of sourdough bread. On the unbuttered side, generously spread the cheese mixture, ensuring an even layer. Top with another slice of bread, buttered side out.

Grill the Sandwiches: Preheat a skillet over medium heat. Place the assembled sandwiches in the skillet, cooking for about 4-5 minutes on each side until golden brown and the cheeses are melted. Press down gently with a spatula for even toasting.

Serve and Enjoy: Remove the sandwiches from the skillet and let them rest for a minute before slicing in half. Serve hot with your favorite tomato soup or as is, and enjoy the melty, gooey goodness!
