2 cups fresh rhubarb, chopped

1 cup granulated sugar

4 cups water, divided

1 cup freshly squeezed lemon juice (about 4-6 lemons)

1 teaspoon vanilla extract (optional)

Lemon slices and fresh mint leaves for garnish

Make the Rhubarb Syrup: In a medium saucepan, combine the chopped rhubarb, sugar, and 2 cups of water. Bring to a gentle boil over medium heat, stirring occasionally until the sugar has dissolved completely.

    Simmer the Mixture: Once boiling, reduce the heat and let the mixture simmer for about 10-15 minutes. The rhubarb will break down, and the mixture will turn a lovely pink hue.

      Strain the Syrup: Remove the saucepan from heat and let it cool slightly. Pour the mixture through a fine-mesh strainer into a bowl or pitcher to separate the syrup from the solids. Use the back of a spoon to press down the rhubarb for maximum extraction. Discard the solids.

        Combine with Lemon Juice: In a large pitcher, combine the strained rhubarb syrup with the remaining 2 cups of water and the freshly squeezed lemon juice. Stir well to blend.

          Enhance the Flavor: Add the vanilla extract if desired, stirring to incorporate. Taste and adjust sweetness or tartness by adding more water, sugar, or lemon juice as needed.

            Chill and Serve: Refrigerate the rhubarb lemonade for at least an hour to chill. Serve over ice cubes in tall glasses. Garnish with lemon slices and fresh mint leaves for a refreshing touch.
