Ingredients
  

1 large cucumber, peeled and chopped

1 cup fresh lemon juice (about 4-6 lemons)

1/2 cup granulated sugar (adjust to taste)

4 cups cold water

Fresh mint leaves for garnish

Lemon slices for garnish

Ice cubes

Instructions
 

In a blender, combine the chopped cucumber and 1 cup of cold water. Blend until smooth.

    Using a fine mesh strainer or cheesecloth, strain the cucumber mixture into a large pitcher, pressing down to extract as much juice as possible. Discard the solids.

      Add the fresh lemon juice and sugar to the cucumber juice in the pitcher. Stir well until the sugar is completely dissolved.

        Gradually add the remaining 3 cups of cold water, tasting as you go to achieve your desired sweetness and tartness.

          Chill the cucumber lemonade in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.

            Serve in tall glasses over ice cubes, garnished with fresh mint leaves and lemon slices for a refreshing presentation.
