1 cup all-purpose flour

1 cup pumpkin puree (fresh or canned)

2 tablespoons brown sugar

1 tablespoon baking powder

1 teaspoon baking soda

1 teaspoon ground cinnamon

½ teaspoon ground nutmeg

¼ teaspoon ground ginger

¼ teaspoon salt

2 large eggs

½ cup milk (or non-dairy milk)

¼ cup vegetable oil or melted coconut oil

1 teaspoon vanilla extract

Instructions
 

Preheat your waffle maker according to the manufacturer’s instructions.

    In a large mixing bowl, whisk together the flour, brown sugar, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt until well combined.

      In another bowl, mix the pumpkin puree, eggs, milk, vegetable oil, and vanilla extract until smooth.

        Pour the wet mixture into the dry ingredients and gently mix until just combined (avoid overmixing). The batter may be slightly lumpy; that’s okay.

          Lightly grease the waffle maker with cooking spray or oil, then pour the recommended amount of batter into the center of the waffle maker. Close the lid and cook according to your waffle maker’s instructions, usually for about 5 minutes, or until golden brown and crispy.

            Carefully remove the waffle and repeat with the remaining batter.

              Serve warm with your choice of toppings such as maple syrup, whipped cream, or pecans.
