Ingredients

For the French Toast:

4 slices of thick bread (brioche or challah works best)

3 large eggs

1 cup milk (or milk alternative)

1/2 cup pure pumpkin puree

2 tablespoons brown sugar

1 teaspoon vanilla extract

1 teaspoon pumpkin pie spice

1/4 teaspoon salt

Butter or oil for cooking

For the Pumpkin Syrup:

1/2 cup pure maple syrup

1/4 cup pure pumpkin puree

1/2 teaspoon pumpkin pie spice

1 tablespoon butter

A pinch of salt

Instructions

Prepare the Pumpkin Pie French Toast Mixture:

    - In a large mixing bowl, whisk together the eggs, milk, pumpkin puree, brown sugar, vanilla extract, pumpkin pie spice, and salt until well combined.

      Soak the Bread:

        - Dip each slice of bread into the pumpkin mixture, allowing it to soak for about 30 seconds on each side. Ensure the bread is well-coated but not falling apart.

          Cook the French Toast:

            - Heat a skillet or griddle over medium heat and add a small amount of butter or oil. Cook the soaked bread slices for approximately 3-4 minutes on each side, or until golden brown and cooked through. Remove and keep warm.

              Make the Homemade Pumpkin Syrup:

                - In a small saucepan over medium heat, combine the maple syrup, pumpkin puree, pumpkin pie spice, butter, and a pinch of salt. Stir well and bring it to a gentle simmer. Allow it to cook for 3-5 minutes, stirring occasionally, until the syrup is heated through and slightly thickened.

                  Serve:

                    - Plate the Pumpkin Pie French Toast slices, drizzle generously with the homemade pumpkin syrup, and top with whipped cream, if desired. You can also sprinkle some additional pumpkin pie spice on top for garnish.
