For the Chicken:

4 boneless, skinless chicken thighs

4 cloves garlic, minced

1 teaspoon ground cumin

2 teaspoons smoked paprika

1 tablespoon olive oil

1 tablespoon white vinegar

Salt and pepper to taste

Juice of 1 lime

Fresh cilantro for garnish

For the Creamy Green Sauce:

1 cup mayonnaise

1/2 cup Greek yogurt

1-2 jalapeño peppers, seeded and chopped (adjust for spice preference)

1/2 cup fresh cilantro leaves

2 cloves garlic

Juice of 1 lime

Salt to taste

Marinate the Chicken:

    - In a large bowl, combine minced garlic, ground cumin, smoked paprika, olive oil, white vinegar, lime juice, salt, and pepper. Mix well to create a marinade.

      - Add the chicken thighs to the marinade, ensuring they're well coated. Cover and refrigerate for at least 1 hour, preferably overnight.

        Prepare the Creamy Green Sauce:

          - In a blender or food processor, combine the mayonnaise, Greek yogurt, jalapeño peppers, fresh cilantro, garlic, lime juice, and salt.

            - Blend until smooth and creamy. Taste and adjust the salt or lime juice as needed. Transfer to a bowl and refrigerate until ready to serve.

              Grill the Chicken:

                - Preheat your grill to medium-high heat. If using a grill pan, heat it on the stovetop.

                  - Remove the chicken from the marinade, letting excess drip off. Place the chicken on the grill and cook for about 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C) and the chicken develops nice grill marks.
