1 ripe peach, pitted and chopped

1 tablespoon honey

1 tablespoon Dijon mustard

1/3 cup balsamic vinegar

1/2 cup extra-virgin olive oil

Salt and pepper to taste

1 teaspoon fresh thyme leaves (optional)

1 tablespoon finely chopped red onion (optional)

Instructions
 

In a blender or food processor, combine the chopped peach, honey, and Dijon mustard. Blend until smooth.

    Gradually add the balsamic vinegar while continuing to blend until well incorporated.
