1 cup polenta (cornmeal)

4 cups water (or vegetable stock for added flavor)

1 teaspoon salt

2 tablespoons unsalted butter

½ cup grated Parmesan cheese (or nutritional yeast for a vegan option)

½ teaspoon black pepper

Optional toppings: sautéed mushrooms, fresh herbs, roasted vegetables, or cherry tomatoes

Instructions
 

In a large pot, bring the water (or vegetable stock) to a boil. Add the salt.

    Gradually whisk in the polenta to prevent any lumps. Reduce the heat to low and continue to whisk until the polenta begins to thicken.

      Once the polenta has thickened (about 5-7 minutes), switch to a wooden spoon and stir continuously, scraping the bottom of the pot to prevent sticking.
