Overnight French Toast Casserole

1 loaf of brioche bread, cut into 1-inch cubes

8 large eggs

2 cups whole milk

1 cup heavy cream

1/2 cup granulated sugar

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/4 teaspoon salt

1/2 cup maple syrup

1/2 cup chopped pecans (optional)

Powdered sugar for dusting (for serving)

Fresh berries for topping (optional)

Prepare the Bread: In a large mixing bowl, combine the brioche bread cubes and chopped pecans (if using). Toss to mix them evenly and set aside.

    Make the Custard: In another large bowl, whisk together the eggs, milk, heavy cream, granulated sugar, vanilla extract, ground cinnamon, and salt until well combined.

      Combine: Pour the egg mixture over the bread cubes, making sure to coat all of them. Gently stir the mixture to ensure even soaking.

        Add Maple Syrup: Drizzle the maple syrup over the top of the bread mixture. Press the bread gently to ensure it absorbs the custard.

          Cover and Refrigerate: Cover the casserole with plastic wrap or aluminum foil and refrigerate overnight (or for at least 4 hours) to allow the bread to soak up the flavors.

            Preheat and Bake: Preheat your oven to 350°F (175°C). Remove the casserole from the fridge, uncover, and let it sit at room temperature while the oven heats up.

              Bake: Bake the casserole in the preheated oven for 40-45 minutes, or until the top is golden brown and the custard is set.

                Serve: Allow the casserole to cool slightly before serving. Dust with powdered sugar and top with fresh berries if desired. Serve warm with additional maple syrup on the side.
