Ingredients
  

2 salmon fillets (6 oz each)

1 cup orzo pasta

2 cups low-sodium chicken broth

1 medium shallot, finely chopped

2 cloves garlic, minced

1 lemon (juiced and zested)

1 cup fresh spinach, roughly chopped

2 tablespoons olive oil

1 tablespoon butter

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Red pepper flakes (optional, for heat)

Prepare the Orzo: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and chopped shallot, sautéing until fragrant and translucent, about 2-3 minutes.

    Cook Orzo: Add the orzo to the skillet and toast it for 1-2 minutes, stirring constantly. This will enhance the flavor. Then, pour in the chicken broth and bring it to a simmer. Reduce the heat, cover, and cook for about 10-12 minutes, or until the orzo is tender and the broth is absorbed.

      Season the Salmon: While the orzo cooks, season the salmon fillets with salt, pepper, and lemon zest on both sides.

        Cook the Salmon: In a separate large skillet, heat the remaining tablespoon of olive oil and the butter over medium-high heat. Once shimmering, place the salmon fillets skin-side down. Cook for 4-5 minutes until the skin is crispy. Flip and cook for another 3-4 minutes until the salmon is cooked through. Remove from the skillet and keep warm.

          Combine and Finish: Once the orzo is cooked, stir in the lemon juice, chopped spinach, and a sprinkle of red pepper flakes (if using). Allow the spinach to wilt and mix well.

            Serve: Plate the lemon orzo, placing the salmon fillets on top. Garnish with fresh parsley and additional lemon wedges if desired.
