1 lb chicken breast, diced

1 tbsp olive oil

3 cloves garlic, minced

1 medium onion, chopped

1 cup chicken broth

1 cup heavy cream

1 lemon, zested and juiced

1 tsp dried thyme

1 tsp dried basil

1/2 tsp salt

1/4 tsp black pepper

1 lb potato gnocchi

2 cups fresh spinach

1/2 cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Sauté the Chicken: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced chicken breast, season with salt and pepper, and cook until browned on all sides, about 5-7 minutes. Remove the chicken and set aside.

    Cook the Aromatics: In the same pot, add the chopped onion and sauté for 3-4 minutes until translucent. Stir in the minced garlic and cook for an additional 1 minute until fragrant.

      Add Liquids: Pour in the chicken broth and bring to a simmer. Add in the heavy cream, lemon zest, lemon juice, thyme, and basil. Stir to combine.
