One-Pan Honey BBQ Chicken Rice

Ingredients
  

2 tablespoons olive oil

4 boneless, skinless chicken thighs

Salt and pepper to taste

1 cup long-grain white rice

2 cups chicken broth

1 cup frozen mixed vegetables (peas, carrots, corn)

1/2 cup honey

1/2 cup BBQ sauce (preferably a sweet variety)

2 cloves garlic, minced

1 teaspoon onion powder

1/2 teaspoon smoked paprika

1 green onion, chopped (for garnish)

Fresh parsley, chopped (for garnish)

Instructions
 

Sear the Chicken: In a large skillet or pan, heat the olive oil over medium-high heat. Season the chicken thighs with salt and pepper. Add the chicken to the pan and sear for about 5-7 minutes on each side until golden brown. Remove the chicken from the pan and set aside.

    Prepare the Rice: In the same pan, add the minced garlic and sauté for about 30 seconds until fragrant. Next, add the rice and stir for another minute to toast it slightly.

      Add Liquid and Chicken: Pour in the chicken broth and bring it to a simmer. Add the honey, BBQ sauce, onion powder, and smoked paprika, stirring well to combine. Return the seared chicken thighs to the pan, nestling them into the rice.

        Cook: Cover the pan with a lid and reduce the heat to low. Allow the mixture to cook for about 20 minutes, or until the rice is tender and has absorbed most of the liquid.

          Add Vegetables: After 20 minutes, sprinkle the frozen mixed vegetables over the chicken and rice. Cover again and cook for an additional 5 minutes, until the vegetables are heated through.

            Serve: Once cooked, remove from heat and let it rest for a few minutes. Fluff the rice with a fork, then garnish with chopped green onions and fresh parsley. Serve warm and enjoy!
