1 lb ground beef (or turkey)

4 medium-sized russet potatoes, diced

1 cup shredded cheddar cheese (or a blend of your favorite cheeses)

1 small onion, chopped

2 cloves garlic, minced

1 cup beef broth (or chicken broth)

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

2 tablespoons olive oil

1 cup frozen peas (optional for color and nutrition)

Fresh parsley, chopped (for garnish)

Instructions
 

Heat the Pan: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.

    Brown the Meat: Add the ground beef to the skillet. Season with smoked paprika, garlic powder, onion powder, salt, and pepper. Cook until the meat is browned and no longer pink, breaking it up with a spatula.

      Cook the Potatoes: Add the diced potatoes to the skillet and pour in the beef broth. Stir to combine. Cover the skillet and reduce the heat to medium-low. Allow to cook for about 15-20 minutes, or until the potatoes are tender, stirring occasionally.

        Add Peas and Cheese: If using frozen peas, stir them in now. Then, sprinkle the shredded cheese over the top. Cover the skillet again and let sit for another 5 minutes, allowing the cheese to melt.

          Garnish and Serve: Once the cheese is melted and bubbly, remove from heat. Garnish with fresh parsley before serving.
