1 can (20 oz) crushed pineapple, drained

1 cup heavy whipping cream

8 oz cream cheese, softened

1 cup powdered sugar

1 tsp vanilla extract

1 cup crushed graham crackers

1/4 cup unsalted butter, melted

1/2 cup shredded coconut (optional)

Fresh pineapple chunks for garnish

Mint leaves for garnish

Instructions
 

Prepare the Crust: In a mixing bowl, combine the crushed graham crackers and melted butter. Mix until well combined. Press the mixture firmly into the bottom of an 8x8 inch square baking dish to form an even layer.

    Make the Cream Cheese Mixture: In another bowl, beat the softened cream cheese, powdered sugar, and vanilla extract together until smooth and creamy.

      Whip the Cream: In a separate bowl, whip the heavy cream until soft peaks form. Gently fold the whipped cream into the cream cheese mixture until fully combined.

        Add Pineapple: Fold the drained crushed pineapple (and shredded coconut if using) into the cream cheese and whipped cream mixture until evenly distributed.
