Ingredients
  

3 large eggs

1/4 cup shredded mozzarella cheese

1/4 cup diced tomatoes

1/4 cup fresh spinach, chopped

2 tablespoons fresh basil, chopped (or 1 teaspoon dried basil)

1 tablespoon olive oil or butter

Salt and pepper to taste

Optional: a pinch of red pepper flakes for heat

Instructions
 

In a mixing bowl, crack the eggs and whisk them until well combined. Season with salt, pepper, and red pepper flakes if using.

    Heat the olive oil or butter in a non-stick skillet over medium heat.

      Pour the beaten eggs into the skillet, allowing them to spread evenly across the bottom.

        As the edges begin to set, gently lift them with a spatula, allowing the uncooked egg to flow to the edges.

          Once the eggs are mostly set (about 2-3 minutes), sprinkle the mozzarella cheese evenly over one half of the omelet.

            Add the diced tomatoes, chopped spinach, and basil on top of the cheese.

              Carefully fold the other half of the omelet over the filled side.

                Cook for another 1-2 minutes, or until the cheese has melted, and the omelet is fully cooked through but still tender.

                  Slide the omelet onto a plate, garnish with extra basil if desired, and serve immediately.
