2 cups all-purpose flour

1/2 cup granulated sugar

2 tsp baking powder

1/2 tsp baking soda

1/4 tsp salt

3/4 cup buttermilk

1 large egg

2 tbsp unsalted butter, melted

1 tsp vanilla extract

Oil for frying

Glaze:

1 cup powdered sugar

2-3 tbsp milk

1/2 tsp vanilla extract

Pinch of salt

Instructions
 

Prepare the Dough:

    In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, baking soda, and salt until well combined.

      Combine Wet Ingredients:

        In another bowl, mix the buttermilk, egg, melted butter, and vanilla extract until smooth.

          Make the Dough:

            Gradually pour the wet mixture into the dry ingredients while stirring gently. Mix until just combined; do not overmix. The dough should be soft but slightly sticky.

              Chill the Dough:

                Cover the bowl with plastic wrap and refrigerate the dough for about 30 minutes to make it easier to handle.

                  Shape the Donuts:

                    Once chilled, turn the dough out onto a floured surface. Roll it to about 1/2-inch thick. Use a donut cutter (or two round cookie cutters) to cut out donuts and holes. Re-roll any scraps to cut additional donuts.

                      Fry the Donuts:

                        Heat oil in a deep pot or fryer to 375°F (190°C). Fry the donuts in batches, about 1-2 minutes on each side, or until golden brown. Remove with a slotted spoon and place on paper towels to drain excess oil.

                          Prepare the Glaze:

                            In a small bowl, whisk together the powdered sugar, milk, vanilla extract, and a pinch of salt until smooth. Adjust the consistency with more milk or powdered sugar if needed.

                              Glaze the Donuts:

                                Once the donuts are slightly cooled but still warm, dip them into the glaze, allowing the excess to drip off. Place on a wire rack to set.
