Mediterranean Lemon Chicken Soup

1 lb boneless, skinless chicken thighs

1 medium onion, finely chopped

3 cloves garlic, minced

2 large carrots, diced

2 stalks celery, diced

1 medium zucchini, diced

1 cup cooked orzo pasta

6 cups chicken broth

1 lemon, juiced and zested

1 tsp dried oregano

1 tsp dried thyme

2 bay leaves

Salt and black pepper, to taste

2 tbsp olive oil

Fresh parsley, chopped, for garnish

Instructions
 

Sauté Aromatics: In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook until translucent, about 5 minutes. Stir in the minced garlic, and cook for another 1-2 minutes until fragrant.

    Brown Chicken: Add the chicken thighs to the pot and sear them for about 5 minutes on each side, until golden brown. You can remove the chicken and set it aside, then chop into bite-sized pieces after it's cooked through.

      Add Vegetables: To the pot, add the diced carrots, celery, and zucchini. Cook for 4-5 minutes until they begin to soften.

        Simmer the Soup: Pour in the chicken broth, lemon juice, lemon zest, oregano, thyme, and bay leaves. Bring the mixture to a boil, then reduce the heat to low and let it simmer for 20-25 minutes.

          Cook Orzo & Finish: In the final 10 minutes of cooking, add the cooked orzo and the chopped chicken back into the pot. Stir everything together and season with salt and pepper to taste. Remove the bay leaves before serving.

            Serve & Garnish: Ladle the soup into bowls, garnishing with fresh chopped parsley for a pop of color and added flavor. Enjoy warm!
