Mediterranean Chicken Pasta Salad

2 cups rotini pasta

1 lb grilled chicken breast, diced

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 cup red onion, finely chopped

1/2 cup Kalamata olives, pitted and sliced

1/2 cup feta cheese, crumbled

1/4 cup fresh parsley, chopped

1/4 cup mayonnaise

2 tablespoons olive oil

2 tablespoons red wine vinegar

1 teaspoon dried oregano

Salt and pepper to taste

Cook the Pasta: In a large pot, bring salted water to a boil. Add the rotini pasta and cook according to package instructions until al dente. Drain and rinse under cold water to cool.

    Prepare the Chicken: Grill the chicken breast on medium-high heat until fully cooked (about 6-7 minutes per side). Let it rest for a few minutes before dicing it into bite-sized pieces.

      Prepare the Veggies: While the pasta is cooking, chop the cherry tomatoes, cucumber, red onion, and parsley. Slice the Kalamata olives.

        Make the Dressing: In a small bowl, whisk together the mayonnaise, olive oil, red wine vinegar, oregano, salt, and pepper to create a creamy dressing.

          Combine the Salad: In a large mixing bowl, combine the cooled pasta, grilled chicken, cherry tomatoes, cucumber, red onion, olives, feta cheese, and parsley.
