Ingredients
  

2 boneless, skinless chicken breasts

Salt and pepper, to taste

2 tablespoons olive oil

3 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried basil

1/2 teaspoon red pepper flakes (optional)

1 cup cherry tomatoes, halved

1 cup heavy cream

1/2 cup grated Parmesan cheese

8 oz fettuccine or pasta of your choice

2 cups spinach leaves

Fresh basil, for garnish

Prepare the Pasta: In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta and set aside.

    Season the Chicken: While the pasta cooks, season both sides of the chicken breasts with salt and pepper.

      Sear the Chicken: In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts to the skillet and cook for about 6-7 minutes on each side until golden brown and cooked through. Remove from the skillet and let rest, then slice into strips.

        Create the Sauce: In the same skillet, reduce the heat to medium and add minced garlic, oregano, basil, and red pepper flakes. Sauté for about 1 minute until fragrant.

          Add Tomatoes and Cream: Add the halved cherry tomatoes and cook for another 2-3 minutes until they begin to soften. Pour in the heavy cream and bring to a gentle simmer. Stir in the grated Parmesan cheese until melted and smooth.

            Combine Pasta and Chicken: Stir in the cooked pasta, spinach leaves, and a splash of the reserved pasta water to loosen the sauce if necessary. Gently fold in the sliced chicken until everything is well coated.
