Ingredients

1 cup all-purpose flour

½ cup cornstarch

1 teaspoon baking powder

1 teaspoon salt

½ teaspoon black pepper

½ teaspoon garlic powder

½ teaspoon onion powder

½ teaspoon paprika

½ teaspoon baking soda

1 cup cold sparkling water (or club soda)

1 ½ pounds fresh white fish fillets (like cod or haddock)

Oil for frying (vegetable or canola oil)

Instructions

Prepare the Fish: Pat the fish fillets dry with paper towels. This will help the batter adhere better. Cut the fillets into manageable pieces if desired.

Make the Batter: In a large mixing bowl, combine the flour, cornstarch, baking powder, salt, black pepper, garlic powder, onion powder, paprika, and baking soda. Whisk together until thoroughly mixed.

Add the Liquid: Gradually pour the cold sparkling water into the dry ingredients while whisking constantly. Mix until you achieve a smooth batter. It should be thick enough to coat the back of a spoon but still pourable. Adjust with more flour or water as needed.

Heat the Oil: In a deep fryer or large, heavy pot, heat oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping a small amount of batter in; it should sizzle and rise to the surface immediately.

Batter the Fish: Working in batches, dip each piece of fish into the batter, allowing any excess to drip off.

Fry the Fish: Carefully place the battered fish into the hot oil, making sure not to overcrowd the pot. Fry until golden brown and crispy, about 4-5 minutes per side, depending on the thickness. Use a slotted spoon to turn the fish halfway through.

Drain and Serve: Once cooked, remove the fish from the oil and drain on paper towels. Season with a sprinkle of salt while hot. Serve immediately with tartar sauce, lemon wedges, and your favorite sides.
