1/4 cup fresh lemon juice (about 2-3 lemons)

1/2 cup extra virgin olive oil

1 tablespoon Dijon mustard

1 tablespoon honey or maple syrup (for a vegan option)

1 clove garlic, minced

Salt and black pepper to taste

1 teaspoon fresh thyme leaves (optional)

Zest of 1 lemon (for extra zing)

Instructions
 

Juice the Lemons: Squeeze the fresh lemons to obtain 1/4 cup of juice. Strain out any seeds and set aside.

    Combine Ingredients: In a medium mixing bowl, whisk together the lemon juice, Dijon mustard, honey (or maple syrup), minced garlic, and lemon zest until well combined.

      Add Olive Oil: Slowly drizzle in the extra virgin olive oil while continuously whisking to emulsify the dressing. This should create a smooth and creamy consistency.

        Season: Add salt and black pepper to taste. If using, fold in the fresh thyme leaves for an added herbaceous note.

          Taste and Adjust: Taste your vinaigrette and adjust with more lemon juice for acidity or honey for sweetness, depending on your preference.
