Lemon Garlic Shrimp Pasta With Spinach

8 oz spaghetti or your choice of pasta

1 lb large shrimp, peeled and deveined

3 cups fresh spinach leaves

4 tablespoons olive oil

4 cloves garlic, minced

Zest of 1 lemon

1/4 cup fresh lemon juice (about 2 lemons)

1 teaspoon red pepper flakes (optional, for heat)

Salt and black pepper, to taste

1/4 cup freshly grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain and set aside.

    Sauté the Shrimp: In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the shrimp and season with salt and black pepper. Sauté for 2-3 minutes until the shrimp turns pink and opaque. Remove shrimp from skillet and set aside.

      Prepare the Sauce: In the same skillet, add the remaining 2 tablespoons of olive oil and minced garlic. Sauté for about 1 minute until fragrant, being careful not to burn the garlic.

        Combine Ingredients: Add the fresh spinach to the skillet and cook until just wilted, about 1-2 minutes. Stir in the lemon zest, lemon juice, and red pepper flakes (if using) and mix well.

          Toss the Pasta: Add the drained spaghetti to the skillet along with the cooked shrimp. Toss to combine and ensure the pasta is well coated with the sauce. If needed, add reserved pasta water, a little at a time, to help create a silky sauce.

            Finishing Touches: Stir in the grated Parmesan cheese for added flavor and creaminess. Adjust seasoning with additional salt and pepper if needed.
