8 oz. whole wheat fusilli pasta

2 cups cherry tomatoes, halved

1 cucumber, diced

1 bell pepper (red or yellow), diced

1/4 cup red onion, finely chopped

1/4 cup fresh basil leaves, chopped

1/4 cup Kalamata olives, pitted and halved

1/2 cup chickpeas, drained and rinsed

Juice of 2 lemons

1/4 cup extra virgin olive oil

1 tsp maple syrup (or agave)

Salt and pepper, to taste

Instructions
 

Cook the Pasta: Begin by cooking the fusilli pasta according to the package instructions until al dente. Drain in a colander and rinse under cold water to stop the cooking process. Allow it to cool completely.

    Prepare the Dressing: In a small bowl, whisk together the lemon juice, olive oil, maple syrup, salt, and pepper until well combined. Adjust the seasoning as necessary.

      Mix the Veggies: In a large mixing bowl, combine the halved cherry tomatoes, diced cucumber, diced bell pepper, red onion, chopped basil, olives, and chickpeas.

        Combine Pasta and Dressing: Once the pasta has cooled, add it to the bowl of vegetables. Drizzle the prepared dressing over the pasta salad, and gently toss everything together until well combined.

          Chill and Serve: Cover the pasta salad and let it chill in the refrigerator for at least 30 minutes before serving. This allows the flavors to meld together beautifully.
